Ingredients:

2 small heads of organic cauliflower
2 small packages of organic dried shiitake mushrooms - smashed
2 large organic leeks, washed thoroughly, and white part chopped
2 tablespoons of coconut oil or grassfed butter
1/2 cup +/- organic vegetable broth to moisten
*1 teaspoon chipotle powder (all seasonings organic)
*1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon of Celtic sea salt
1/2 teaspoon cinnamon
1/2 teaspoon cracked black pepper (or to taste)

Note: Always presume all ingredients listed are organic and/or as natural as can be (GMO and pesticide free).

Directions:

Wash and roughly chop the cauliflower
Use the grating attachment on the food processor and grate all cauliflower. If you don't have a food processor, you can use a cheese grater but it takes a lot longer to prep.
Melt the oil or butter in the large skillet or dutch oven over medium high heat.
When melted, add the leeks and saute' while stirring for about 5 minutes.
Add mushrooms and continue to stir for another 2 minutes.
Add cauliflower, spices and broth and stir until thoroughly mixed.
Continue to stir and heat the cauliflower mix until heated through, approximately 10 minutes.
Serve and enjoy!
